• 6 plum tomatoes – halved
  • 2 green chilies deseeded and finely chopped
  • 8 garlic cloves – peeled 7 sliced
  • ½ red onion finely diced
  • Handful of coriander finely chopped
  • 1 tbsp olive oil
  • Salt & pepper
  1. Place the tomatoes cut side up on a baking tray and season with salt and pepper.
  2. Place them under the grill for about 15 minutes until chard.
  3. In a frying pan and add the olive oil and fry the chiles & garlic and fry until the garlic is golden.
  4. Place the tomatoes, chiles & garlic into a food processor along with all the other ingredients and pulse until all combined but still chunky.
